The nitrate-nitrite-NO pathway involves the following steps: (1) nitrate is absorbed into the blood in the upper digestive tract after a meal; (2) approximately 25% of nitrate is absorbed by salivary glands and secreted into the oral cavity via saliva; (3) nitrate-reducing bacteria in the oral cavity reduce nitrate to nitrite; (4) nitrites are swallowed and reabsorbed into the blood; (5) various enzymes in the blood and tissues reduce nitrites to nitric oxide (NO).
